Stacy's New England Lobster Salad With Chips
Ingredients
Optional:
1 (6 oz) can lobster meat, drained or fresh lobster meat, chopped
1 tablespoon chopped fresh parsley
¼ cup chopped celery
½ cup mayonnaise
½ teaspoon lemon juice
¼ cup chopped onion
¼ teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper
paprika to taste
add tomato or hard-boiled egg wedges
Directions
- In a large bowl, combine the lobster, celery, onion, mayonnaise, lemon juice, parsley, garlic powder, salt and pepper.
- Mix well and refrigerate until chilled.
- Arrange lobster onto chopped lettuce with scoop.
- Sprinkle with paprika if desired.
- Add tomato wedges or hard boiled egg wedges and serve with Stacy’s® Pita Chips (Pesto & Sundried Tomato, Parmesan Garlic & Herb, Naked or Multigrain).
