Stacy's New England Lobster Salad With Chips

Ingredients

Optional:
1 (6 oz) can lobster meat, drained or fresh lobster meat, chopped
1 tablespoon chopped fresh parsley
¼ cup chopped celery
½ cup mayonnaise
½ teaspoon lemon juice
¼ cup chopped onion
¼ teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper
paprika to taste

add tomato or hard-boiled egg wedges

Directions

  1. In a large bowl, combine the lobster, celery, onion, mayonnaise, lemon juice, parsley, garlic powder, salt and pepper.
  2. Mix well and refrigerate until chilled.
  3. Arrange lobster onto chopped lettuce with scoop.
  4. Sprinkle with paprika if desired.
  5. Add tomato wedges or hard boiled egg wedges and serve with Stacy’s® Pita Chips (Pesto & Sundried Tomato, Parmesan Garlic & Herb, Naked or Multigrain).
